I am originally from a small town in Florida where the strawberry is queen. Every year there is a Strawberry Festival, and a Strawberry Queen is elected (gotta love those little old towns and their Onion Queens, Garlic Queens, etc.). The festival has rides, and games, but it’s all about the food. Strawberry pie, strawberry milkshakes (a couple places have these year round), and of course the good old strawberry shortcake. Other than the milkshake, I can’t partake in those other items. While I was there I really wanted to get a strawberry milkshake, but the place we usually went was closed, and I never got around to getting one at another place. However, I did get a delicious salad.
That’s what made me want to recreate this salad. I really wanted to share it with my family here, and with all of you. It’s light (especially good for these dog days of summer), and it’s very refreshing. You’ve got vegetables, fruit, healthy protein, and good fats. It’s a pretty perfect balance.
And, feel free to make this salad your very own. Use feta, blue cheese, mozzarella, or whatever cheese you love. Soft is best though. I think a balsamic vinaigrette would pair perfectly as well.
Strawberry Walnut Salad
- Local lettuce (or organic, or both), chopped
- Local strawberries (or organic, or both), sliced
- Shredded Tillamook Vintage White Sharp Cheddar (or your favorite cheese)
- Walnuts, broken into small pieces
- Extra Virgin olive oil
- Local Honey
- Red Wine Vinegar
- Salt and Pepper
Toss the first four ingredients, in the amounts you need to feed everyone you’re serving, and lightly dress with the vinaigrette (1:3 ration of vinegar to olive oil, a touch of honey to bring about a little sweetness, and seasoned with salt and pepper).
And, if you don’t eat dairy, simply skip the cheese. It’s still delicious!
