Camping Trip 2

Of course I’ve been on more than two camping trips, but this is my second post about our camping trips. I am quite exhausted from my preparations today, but I can tell that it’s going to be a healthful and delicious weekend full of fun and adventure. There will be 4-5 of us, and to make things easier on everyone I went ahead and made the meal plan and have chosen to whip up a lot of the food before we go.

Here’s the list of what I’ll be serving up:

Friday Night: Chili
Saturday Morning: Eggs, Bacon, Honey Raisin Lemon Drop Scones
Saturday Lunch: High Enzyme Salad from Nourishing Traditions
Saturday Dinner: Burgers, Cottage Fries, leftover salad
Sunday Breakfast: Oatmeal with Honey, Nuts, Raisins, and Cinnamon
Sunday Lunch: Hummus, Tapenade, Pita Bread, Veggies

Snacks:
Crispy Almonds
Popcorn
Veggies with Almond Butter
Bananas
Sunflower Seed Brownies
Smores

Beverages:
Apple Juice
Hot Cocoa
Almond Milk

Make Ahead:
Almond Milk
Almond Butter
Pita Bread
Brownies
Chili
Graham Crackers
Mix dry ingredients for scones

We’re planning to do a lot of hiking, traveling about on the mountain, and we’re also going to play a lot of board games. I’m excited. Sunday night we’ll be going to dinner for Mother’s Day with Devin’s mom.

As you can see, you can have a delicious weekend that includes healthful foods. We must remember though, that the weekend is about being with friends and in nature. It’s not all about the food.
