
Two weeks ago I had a desire to head back into some of the Southern roots I grew up with. I wanted to taste those memories. So, I made some barbecued chicken, potato salad, and collard greens.
The week prior I had been talking with my dad about his plethora of jalapeno peppers and what he was going to do with them. He said that he might boil up some vinegar and make…pepper sauce!
Pepper sauce is boiled vinegar over pierced peppers. It soaks and becomes a delicious and spicy flavoring for southern cooking, especially greens.
Sauteed greens, soup with greens, or even fried chicken do very well with this Southern condiment.
It’s super easy to make. Here’s what you’ll need:
Homemade Southern Pepper Sauce
Hardware:
Empty Salad Dressing Bottle with lid
Push Pin/Thumb Tack
Fork
Software:
Peppers of choice
White Distilled Vinegar
Wash the peppers and dry them. Then, poke them all the way around with the fork.
Place the peppers into the clean salad dressing bottle.
Boil vinegar on the stove top, just enough to fill the bottle with the peppers in it.
Pour boiled vinegar into the bottle over the peppers.
Puncture the plastic lid of the bottle with the push pin. Make 5 small holes.
Let cool for a few minutes, then place in the fridge.
The pepper sauce is now ready to be used.
When the vinegar runs out, boil some more and pour it into the bottle. Repeat until there is no more pepper flavor.
