
For the first time ever I broke down a whole chicken. I split it in half down the back using my new kitchen shears, separated the legs from thighs, the wings from breasts, and the breasts from thighs using my new boning knife.
Let me tell you, good tools really do make a world of a difference.
Organic chicken is expensive, especially boneless skinless chicken breasts. I can now buy an entire organic chicken and remove the skin and bones on my own. It’ll take some work to figure out some of the bones, but I believe that I will be able to do it perfectly some day given the right tools and some training.
I have some great tools right now in the form of knives, but I still need the training. That’s where school comes in this fall.
The paperwork is nearly complete, and I may have to go downtown to finish it tomorrow, but I’d be pretty willing to say that I am 99.9% there.
I was proud of myself for taking care of the chicken, and I will be even more proud of myself when I learn even more things in school.
