Some Truth

Let’s talk some truth. Having to change the way we eat is not always fun. Sometimes we just want to be able to order in pizzas for when you’re having friends over for dinner. Sometimes you want to pay normal prices on things like flour, bread, and pasta. Sometimes you want to dine out, or pick up some sub sandwiches for a picnic.

Sitting down to work out my meal plan can drive me insane some weeks. There are times when everything just falls into place for the menu, but there are also times where your cabinets feel bare while they are actually fairly full. Why don’t the things in the cabinets add up to a meal sometimes? I know they could if I were in a pinch, but I like variety, and I like exciting new foods. I have enough beans and rice to literally survive a few months without starvation. I’ve got spices galore.

In my garage freezer there are actual pieces of deer with fur still on them. I can see the white markings on the tan fur. Thankfully I haven’t come eye to eye with a deer. I think the Nerd’s brother buries those.

There are also burger patties and some chicken pieces in the freezers that a friend left here for our parties.

And, I’ve got a couple chicken breasts in my freezer that I haven’t used yet since I can still afford to buy organic chicken breasts fresh.

Trying to dine locally, organically, and gluten-free can take its toll even on me. But, I have to remember that I’m not alone. You’re not alone. Together we can get through the bumps in the road.

Thursday Dinner: Roast Chicken with mashed potatoes and green beans

BBQ Chicken, Potato Salad, and Corn on the Cob

Vegetarian Tacos

Crockpot Gumbo

Channa Masala

Spaghetti with Sun Dried Tomato Sausage and Garlic Knots
