
The Mediterranean Diet became a hit over the last few years and even found its way to becoming a new Food Guide Pyramid. The diet incorporates healthy fats in the forms of olive oil and nuts. There are also plenty of servings of fruits and vegetables and seafood. Poultry and eggs are eaten in moderation, and red meat is eaten even less often. Sweets are eaten sparingly. Wine, particularly red, is included in the diet but in moderation. It’s all on the base of being physically active and dining with others.

Karina has some delicious looking Mediterranean recipes on her blog. In fact I have been holding onto her Mediterranean Chicken Soup recipe for a while, and I finally pulled the ingredients together and cooked it up. Instead of chicken, I substituted some Aloha Brand firm tofu, and I added some extra vegetables and herbs I had on hand. That’s the best thing about soup. You can add extra this or that or whatever else you have in your kitchen.
The Nerd called this “German Zucchini Soup” because he has been saying for a long time now that “Germans don’t fuck around.” He means that people from Germany are efficient and good at whatever they set to do. Our friend from Germany found this quite amusing. So, since this soup is so delicious and the flavors are spot on all the way around, the Nerd feels this soup is worthy of comparison to something German.
I think it speaks of summer flavors with all of the zucchini, and that the vegetables are quite delightful and healthful tasting. The tofu worked out brilliantly and took on a chicken like texture. Over all I felt rather healthy, and not stuffed by this soup. It’s even delicious to eat in the hot summer months.




Ooh, this looks yummy. I love anything with tofu. I have some friends following the Meditarranean diet and they swear by it. Both have lost weight and both look terrific!

Thank you for commenting Ellen. I’ve not known anyone on the Mediterranean Diet, but I know people who similarly out of their own nature. It’s definitely a healthful, and delicious, way of eating.
