Thursday Dinner: Vegetarian Black Bean and Pumpkin Enchiladas

Friday-Wednesday:

3 Color Donburi (didn’t get cooked last week)

Pizza with Roma Tomatoes, Basil and Goat Cheese

Crockpot Candy Chicken with orange sweet potatoes(a.k.a. yams), onions, and carrots

Mediterranean Chicken Soup (substituting tofu for the chicken)

Chili and Masa Cakes

I’ve been feeling a bit of a writer’s block this week, so I went to the library and picked up a few cookbooks to help inspire me. Here’s what I was able to grab up at our little library.

The Gluten-Free Gourmet Cooks Fast and Healthy by Bette Hagman

Julia’s Kitchen Wisdom by Julia Child (yes, again)

Nigella Express by Nigella Lawson

I know that my local library has more gluten-free cookbooks, but I can never get my hands on them. They’re always checked out which makes me wonder who is checking them out. Perhaps I need to put a flyer up for this blog at the library. I also know that people have been buying the gluten-free orange cake at Starbucks near me (by the way, these are being discontinued, so get them while you can). So, who are these people? Why don’t I know them? Come out come out whoever you are!

I hope your weekend is delightful. Tonight we’re going out to see the new Harry Potter movie. Don’t worry, I’ll have a Larabar in my purse and a full dinner in my belly.
