
Mmm, citrus. Mmm, chicken. Mmm, lemon chicken.
The Nerd and I have been chowing down hard on the Lemon Chicken from Crockpot365 since I went gluten-free more than a year ago. Yet, I haven’t shared it with you all yet.
Lemon Chicken is definitely on our crack food list, but unfortunately I don’t make it often. Why? Because the only lemonade concentrate I can buy has High Fructose Corn Syrup in it. Those are 4 dangerous words in our house when put together. We make it a habit not to purchase any products with HFCS in them. We only have it in our diets when we go out to eat and have sodas, or when something like this dish occurs.
I desperately wish I could find a substitute brand, and maybe when Whole Foods opens here I will be able to find a frozen lemonade concentrate without the HFCS in it. For now, this meal will just be an occasional treat.
For all of the preaching I do about eating local, and organically, I have to have a little something every now and then just like the rest of you. We’re not perfect eaters here, and I don’t expect any of you to be. It’s all about doing the best you can, with what you can, and not depriving yourself of pleasureful foods. If some food item gives pleasure, eat it. But, don’t go over board. And, you might not even care that much about it once you’ve begun to eat real, local, healthy food.
