We’re going back up to the little cabin this weekend, but we’re taking friends this time. I’ve taken on most of the cooking, and I’m glad to do it.
So, today I am packing, and baking, and chopping.
There’s cornbread from Gluten Free Mommy. It’s simple easy, and will travel well.
I’ve made up the Irish Soda Bread from Karina’s Kitchen. I’ll be serving this with soup, hummus, and salad.
Speaking of the hummus, I forgot to make it. There’s still time while the rest bakes…
I’m just about to whip up a dessert to take. With two serious chocolate lovers, and myself (who likes chocolate but not as much as the other two), I’ve decided to make the Dark Chocolate Infused Mochi Cake from The Cinnamon Quill. It looks freaking fantastic in her pictures.
Here’s what we’ll be dining on:
Friday Dinner: Corn & Lemongrass Soup, Salad, & Soda Bread
Saturday Breakfast: Veggie Frittata, Potatoes with Onions, Strawberries
Saturday Lunch: Jalfrezi Simmered Tofu, Snow Peas, and Rice
Saturday Dinner: Vegetarian Chili & Cornbread
Sunday Breakfast: Hot Cereal with Cinnamon, Nutmeg, Honey, and Strawberries
Sunday Lunch: Hummus, Salad, Soda Bread
We’ll be getting up there late this time, so we may do dinner before. I’m not sure yet though. We’ll see. The Nerd and I have a meeting to attend from 5-7pm, so we should arrive at the cabin by 8pm. That’s a bit past dinner time, but it’ll be fine.

Thank you Cnnamonquill for providing us with a delicious, and uber chocolatey dessert. Everyone loved it, and we were all left wanting more once the last brownie was gone.
I was glad that it could stand up to being at room temperature, and where I was camping was a fairly cool location.
