Incredibly Easy Gluten-Free Recipes

A friend of mine bought me a cookbook called “Incredibly Easy Gluten-Free Recipes.” Gluten-free cookbooks are a great gift, especially for those who love to cook. But a cookbook with easy recipes are great for those who aren’t as fond of cooking as I am.

I had the opportunity this past week to try out one of the main dishes from the book. Well, actually it’s under a section titled “Better Birds.”

I whipped up the Indian-Style Apricot Chicken. This was a pretty easy crockpot recipe, but I’ve made simpler. I had to brown the chicken thighs in a pan, along with the spices and tomatoes before I put it all into the crockpot.

Dried apricots are also expensive to get here, so this couldn’t be a regular meal for me.

The recipe calls for the chicken to be served over Basmati Rice, and I just happened to have bought some a couple weeks ago.

Basmati rice is really easy to cook, and it cooks up fast. There is period of soaking the rice before cooking it, but that’s only about 15-30 minutes depending on how much time you have.

Overall the dish was very rich, but pretty good. I’d rate it a 2 or 3 out of 5 stars. The Nerd says 3′s are comfort food, and 4′s and 5′s are reserved for crack foods. So, this earns a 2 for him as well.

There are some other good looking foods in the cookbook, including desserts, breakfasts, Pad Thai, simple Thanksgiving food, seafood, and more.

There is no author, so I wouldn’t even know who to credit the recipes to. It appears to be created by a company called “Favorite Brand Name” of which I’ve never heard about before.

The really funny thing my friend told me is that she almost bought me “The Gluten-Free Vegan” instead. Since I already own and love that book, it’s probably better that she went for the other.

I wouldn’t recommend that anyone buy this book because there are so many other great gluten-free cookbooks on the market, but if you happen to see it on sale or are given it as a gift then by all means own it and use it.
